Potato Stew with Sausage

2 pounds smoked sausage cut into 1/4 inch slices

2 tablespoons of Tony creole seasoning (may need extra when seasoning to taste)

5 pounds of russet potatoes diced into 1 inch cubes

1 tablespoon of vegetable oil

1 large yellow onion, chopped

½ red bell pepper, chopped

2 celery ribs, chopped

1 teaspoon parsley (fresh preferred but dried is also an option)

2 cloves of garlic

Directions:

  1. Sauté chopped onion, bell pepper, celery, and garlic in the oil. 
  2. Add sausage and brown the sausage and vegetables over medium high heat until they caramelize (about 15 – 20 minutes depending on stove).
  3. Mix in the diced potatoes thoroughly.
  4. Add water until the potatoes are completely underwater. Add seasoning and cover to cook.
  5. Stirring occasionally, let cook on medium heat for about 60 minutes or until the potatoes reach a very soft consistency.  Season to taste. Serve over rice.
