Grandma Norma’s File’ Gumbo

1 cup cooking oil

4 medium onions

1 cups flour

1 large pkg. Dubuque smoked sausage

1 pkg. chicken breast

1 pkg. chicken thighs

1 pkg. chicken drum sticks

1 tsp. garlic powder or fresh garlic

10 cups water- cold

2 tbsp. Tony Chachere’s Creole Seasoning

1 bunch parsley

2 bunches green onions

6 or more dozen fresh oysters plus oyster water (optional)

Salt and pepper to taste

5 tablespoons Gumbo File’

Directions:

Brown flour to a golden color in oil. Simmer onions, add sausage and chicken, and fry lightly. Add water and oyster water, then seasoning. Cook until chicken is cooked. Pick with fork to see if tender. Add oysters. Let oysters cook until they curl. While still in a boil, add Gumbo file’ and let boil for just a few minutes, stirring surface, skim off. this will prevent heartburn.
