Beefy Taco Stew

1 1/2 lbs. beef  stewing meat, cubed

16oz bag  baby Carrots

4 potatoes, with peel cubed

1 small onion chopped

1 red bell pepper, chopped

8 oz. can tomato sauce

1 pkg. taco seasoning mix

2 cups water, divided

1 1/2 tbsp. cornstarch

2 tsp. salt

Slow Cooker Directions:

Layer the first five ingredients in the slow cooker. Add tomato sauce. Combine taco seasoning with 1 1/2 cups water. Stir cornstarch into the remaining 1/2 cup water until smooth. Combine with the rest of the water with the taco seasoning mix and stir well. Pour over ingredients in the slow cooker. Sprinkle with salt and cover. Cook on LOW 7-8 HOURS or High 3-4 hours.

Pressure Cooker Directions:

Layer the first five ingredients in the pressure cooker. Add tomato sauce. Combine taco seasoning with 1 1/2 cups water. Stir cornstarch into the remaining 1/2 cup water until smooth. Combine with the rest of the water with the taco seasoning mix and stir well. Pour over ingredients in the pressure cooker. Sprinkle with salt and cover. Cook on Meat/Stew for 30 minutes.

Note: May add 1 teaspoon of sugar to dull down the spice of the taco seasoning.
