{"id":915,"date":"2019-10-09T10:15:03","date_gmt":"2019-10-09T15:15:03","guid":{"rendered":"http:\/\/bigheartskitchen.net\/recipes\/?page_id=915"},"modified":"2022-06-07T15:53:15","modified_gmt":"2022-06-07T20:53:15","slug":"potato-stew-with-sausage","status":"publish","type":"page","link":"https:\/\/bigheartskitchen.net\/recipes\/?page_id=915","title":{"rendered":"Potato Stew with Sausage"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\"><\/h2>\n\n\n\n<p>2 pounds smoked sausage cut into 1\/4 inch slices<\/p>\n\n\n\n<p>2 tablespoons of Tony creole seasoning (may need extra when seasoning to taste)<\/p>\n\n\n\n<p>5 pounds of russet potatoes diced into 1 inch cubes<\/p>\n\n\n\n<p>1 tablespoon of vegetable oil<\/p>\n\n\n\n<p>1 large yellow onion, chopped<\/p>\n\n\n\n<p>\u00bd red bell pepper, chopped<\/p>\n\n\n\n<p>2 celery ribs, chopped<\/p>\n\n\n\n<p>1 teaspoon parsley (fresh preferred but dried is also an option)<\/p>\n\n\n\n<p>2 cloves of garlic<\/p>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Saut\u00e9 chopped onion, bell pepper, celery, and garlic in the oil.&nbsp;<\/li><li>Add sausage and brown the sausage and vegetables over medium high heat until they caramelize (about 15 &#8211; 20 minutes depending on stove).<\/li><li>Mix in the diced potatoes thoroughly.<\/li><li>Add water until the potatoes are completely underwater. Add seasoning and cover to cook.<\/li><li>Stirring occasionally, let cook on medium heat for about 60 minutes or until the potatoes reach a very soft consistency.&nbsp;&nbsp;Season to taste.
