{"id":328,"date":"2013-02-10T04:28:24","date_gmt":"2013-02-10T10:28:24","guid":{"rendered":"http:\/\/bigheartskitchen.net\/recipes\/?page_id=328"},"modified":"2022-06-07T13:22:18","modified_gmt":"2022-06-07T18:22:18","slug":"stacys-healthy-super-fiber-filled-oatmeal-cookies","status":"publish","type":"page","link":"https:\/\/bigheartskitchen.net\/recipes\/?page_id=328","title":{"rendered":"Stacy&#8217;s Healthy Super Fiber-filled Oatmeal Cookies"},"content":{"rendered":"<p>In a small bowl combine the following:<\/p>\n<p>2 tablespoons of whole chia seeds<br \/>\n1 cup of water<\/p>\n<p>Mix with fork until all seeds are wet and set aside for later.<\/p>\n<p>In a large bowl combine the following:<\/p>\n<p>1 stick of salted butter (1\/2 cup)<br \/>\n1 cup of splenda<br \/>\n1\/2 cup of brown splenda<br \/>\n1\/2 cup of whole flaxseeds<br \/>\n3\/4 cup of whole wheat flour<br \/>\n3\/4 cup of ground flaxseed<br \/>\n4 cups of dry steel cut oatmeal<br \/>\n2 teaspoons of vanilla extract<br \/>\n1\/2 teaspoon salt<br \/>\n1 teaspoon of baking soda<br \/>\n2 tablespoons of milk<br \/>\n2 eggs<\/p>\n<p>Optional addition ideas:<br \/>\n1\/2 to 1 cup of mini or regular chocolate chips, peanut butter chips, butterscotch chips, nuts, raisins, cranberries, etc.<\/p>\n<p>Once chia seeds are a pudding-like consistency, add to large bowl. &nbsp;Mix all ingredients well. &nbsp;Roll into a small ball and put on cookie sheet.<\/p>\n<p>Due to low fat content, the cookies do not spread. You&#8217;ll need to press them to your desired flattness. &nbsp;The flatter and thinner you make the unbaked cookie, the crispier the cookie will be out of the oven. &nbsp;A thicker cookie will come out softer and cakier. &nbsp;Can also be made into bars and cut to desired size.<\/p>\n<p>Bake at 375 for 13 to 15 minutes. &nbsp;Makes approximately 45 cookies. &nbsp;Each cookie is approximately 70 calories (without optional additions).<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In a small bowl combine the following: 2 tablespoons of whole chia seeds 1 cup of water Mix with fork until all seeds are wet and set aside for later.
